My husband played around perfecting this recipe not long after we got married and I couldn’t believe my luck! 😉
As per usual, my recipes are flexible and can be adapted to suit your tastes. Lemons could be substituted for limes…1-2 tsp of chilli could be added…a handful of fresh coriander could be chopped in…just use however many fish you have…
Coconut & Lime Fish.
Dash of Olive Oil
500g Fish (our favourite is Snapper)
1x 400g Can of Coconut Cream
1-2 tsp Garlic
1-2 Tsp Honey
2-3 Fresh Lemongrass stalks chopped finely
Lime juice & slices to taste (lime can be quite strong so although I can get carried away as it looks pretty, less is more in this case)
Place fish into an ovenproof dish (whole fillets or pieces)
In a bowl combine Coconut Cream, Olive Oil, Garlic, Honey, Lemongrass, Lime & any additions to your preferred taste.
Pour over the fish and gently mix.
Bake for 20 minutes, covered, or until fish is cooked through.
Serve on rice with vegetables in season.
