Garlic & Parsley Deviled Eggs – Chasing Crusoe.

A refreshing alternative to traditional deviled eggs – the combination of garlic, parsley and lime sings spring/summer bbq’s with friends. ❤


6 eggs

1/4 cup mayonnaise (homemade or store bought)

1 garlic clove (crushed)

1/3 cup parsley (chopped)

A few baby spinach leaves (chopped)

Juice of a small lime

Salt & pepper to taste

(Tip: Substitute lemon for lime if you wish or omit if unavailable)



Bring a pot of water to the boil.

Gently add eggs & boil them for 7 minutes.

Remove from heat.

Leave eggs to cool before peeling & cutting eggs in half length ways.

Remove the yolks, mash & combine with all other ingredients in a bowl, mixing well.

Transfer the egg yolk mixture back into the egg whites.

Serve & enjoy fresh.
