Lime Salted Kale & Parsley Chips – Chasing Crusoe.


Juice of 1/2 a small lime

A handful of kale (any variety)

A handful of parsley

Extra Virgin Olive Oil (or alternative good quality oil of your choice)

Salt (I use Mrs Roger’s Fine Sea Salt, but any alternative of your choice is fine)


Preheat oven to 150Β°C.

Remove kale & parsley from stalks & discard stalks.

Cut or tear the kale & parsley into small chip size pieces.

Line a baking tray with baking paper.

Gently coat the kale & parsley in olive oil (just enough to lightly coat).

Sprinkle sparingly with salt, the lime juice and mix gently.

Spread out on the tray in a single layer.

Bake in the preheated oven for approx 15 minutes. As all ovens vary slightly, I would start to check the chips from 12 minutes as they burn easily.

Remove from heat, leave to cool then enjoy!
